- 300 g Shrimp (peeled and deveined)
- 200 g Cream cheese (plain or with herbs)
- 2 cloves Garlic, finely chopped
- 1 small Onion, finely diced
- 150 ml Vegetable broth
- 100 ml Cream (optional for extra creaminess)
- 2 tbsp Olive oil
- Juice of ½ Lemon
- Salt and Pepper to taste
- Fresh Dill, Parsley or Basil for garnish
- Chili flakes (optional for some heat)
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente (about 8-10 minutes). Be sure to reserve about 100 ml of pasta water before draining the spaghetti.
- While the spaghetti is cooking, heat 2 tbsp of olive oil in a large pan over medium heat. Add the finely diced onion and sauté for about 3-4 minutes until translucent, being careful not to burn it.
- Add the finely chopped garlic and sauté for 1-2 minutes until fragrant, ensuring the garlic does not burn as it will become bitter.
- Add the peeled and deveined shrimp to the pan and sauté for 2-3 minutes until they are pink and cooked through. Drizzle with the juice of ½ lemon and then remove from the pan. Set aside.
- In the same pan, add the cream cheese, vegetable broth, and cream (if using). Stir well until a smooth sauce forms. Season the sauce with salt, pepper, and optional chili flakes.
- Return the drained spaghetti and shrimp to the pan. Mix everything well, adding reserved pasta water as needed to achieve a smoother sauce. Heat for 1-2 minutes until everything is evenly warm.
- Serve the spaghetti on plates and garnish with fresh herbs like dill, parsley, or basil. Enjoy immediately!
