  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 8 ounces (225 grams) fresh button mushrooms, finely chopped
  • 2 tablespoons unsalted butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • Salt and pepper to taste
  • 1 cup (100 grams) cream cheese, softened
  • ½ cup (50 grams) grated Gruyère cheese (or any cheese of your choice)
  • ½ cup (50 grams) grated mozzarella cheese
  • 2 tablespoons fresh parsley, finely chopped (for garnish)
  • Optional: 1 tablespoon Worcestershire sauce or soy sauce for added umami

Instructions

  1. Preheat your oven to 200 degrees Celsius.
  2. Slice the baguette into ½-inch thick rounds. Place the slices on a baking sheet and brush them with 3 tablespoons of olive oil, ensuring each slice is well coated.
  3. Sprinkle 1 teaspoon of salt and ½ teaspoon of black pepper evenly over the slices. Toast the baguette in the preheated oven for about 8-10 minutes, until the edges are golden brown.
  4. While the toasts are in the oven, prepare the mushroom filling. Heat 2 tablespoons of unsalted butter in a pan over medium heat. Add the finely diced onion and sauté for 3-4 minutes until soft and translucent.
  5. Add the chopped mushrooms and garlic, and sauté for another 5-7 minutes until the mushrooms are soft and release their moisture. Add 1 teaspoon of fresh thyme leaves and salt and pepper to taste.
  6. In a separate bowl, mix 1 cup of softened cream cheese, ½ cup of grated Gruyère, and ½ cup of grated mozzarella. Stir well until everything is combined. Optionally, add 1 tablespoon of Worcestershire or soy sauce for enhanced umami flavor.
  7. Once the toasts are done roasting, remove them from the oven and generously spread the mushroom mixture on each slice. Then, spoon the cheese mixture evenly on top.
  8. Bake the toasts for an additional 10-12 minutes in the oven until the cheese is golden brown and bubbling. Be careful not to leave them too long to avoid burning.
  9. After baking, remove the toasts and let them cool slightly. Garnish with freshly chopped parsley and serve warm.
