  • 1 egg
  • 50g grated Parmesan cheese
  • 50g cream cheese
  • 23 tablespoons almond flour or coconut flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)
  • Fresh parsley or chives (optional)

Instructions

  1. Divide the cauliflower into small florets and steam or boil for about 10 minutes until soft. It should be easily mashable with a fork.
  2. Drain the cooked cauliflower well to remove excess moisture. This is important to prevent the patties from becoming too wet and falling apart while frying.
  3. In a large bowl, mash the cauliflower with a fork or potato masher until no large pieces remain.
  4. Add the egg, grated Parmesan, and cream cheese. Mix well until a uniform mixture forms.
  5. Now stir in the almond flour, garlic powder, onion powder, and salt and pepper. Mix everything thoroughly until a homogeneous mixture forms. The mixture should not be too liquid; add more almond flour if needed.
  6. Using your hands, form small portions of the mixture, about the size of a table tennis ball. Ensure they are evenly shaped for even cooking.
  7. Heat 2 tablespoons of olive oil in a skillet over medium heat. Carefully place the patties in the skillet. Fry them for about 4-5 minutes on each side until golden brown and crispy.
  8. Let the finished patties drain on paper towels and garnish with fresh parsley or chives if desired.
