These Taco Beef Tortilla Pinwheels are a delightful combination of spicy ground beef, fresh vegetables, and melted cheese, making them an irresistible snack. Perfect for parties or family gatherings, they are easy to prepare and visually appealing.

Ingredients

Scale
  • 1 lb (450 g) ground beef
  • 1 packet (1 oz) taco seasoning mix
  • 1/2 cup water
  • 4 large flour tortillas (10-inch diameter)
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • 1/2 cup black olives, sliced
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/4 cup sour cream (for serving)
  • Salt and pepper, to taste

Instructions

  1. Heat a large skillet over medium heat and cook the ground beef for about 5-7 minutes until evenly browned, breaking it apart with a wooden spoon as it cooks.
  2. Add the taco seasoning and water. Stir well and let the mixture simmer for another 3-5 minutes until the liquid has almost completely evaporated, resulting in a thick, spicy meat mixture.
  3. In a separate bowl, mix the cream cheese with the shredded cheddar cheese. This will be the creamy filling for your pinwheels.
  4. Place one tortilla on a clean surface and spread about 1/4 of the cream cheese mixture evenly over it, being careful not to overload the edges.
  5. Add about 1/4 of the seasoned ground beef on top of the cream cheese mixture and sprinkle some of the shredded lettuce, diced tomatoes, and olives over it.
  6. Begin to carefully roll the tortilla from one side to form a tight roll. Once the tortilla is well filled, gently press it together to keep it from unrolling.
  7. Repeat this process with the remaining tortillas and filling until everything is used up. You should have a total of four rolls.
  8. Cut the rolls into about 1-inch (2.5 cm) thick slices and place them on a serving platter. You can serve them immediately or refrigerate until ready to serve.
  9. Serve the pinwheels with a dollop of sour cream and optional fresh cilantro for added flavor. Enjoy the first bite!

Keywords: Make sure to cook the ground beef thoroughly to avoid a dry texture. Use a non-stick pan to prevent the meat from sticking and to make cleanup easier. Feel free to adjust the ingredient ratios – add more cheese for a creamier filling or more vegetables for extra freshness.
