Instructions

  1. For the dough: Mix low-fat quark, grated cheese, eggs, salt, and pepper in a bowl until smooth. This should yield a smooth mixture that is not too dry. (about 5 minutes)
  2. Spread the dough evenly on a baking sheet lined with parchment paper. Make sure the dough is not too thick for even baking. (about 5 minutes)
  3. Bake in a preheated oven at 180°C (356°F) for about 15-20 minutes until the dough is lightly golden and feels firm. (Note: The surface should be slightly crispy.)
  4. Meanwhile, fry the ground beef in a pan with a little oil. Season with salt, pepper, and paprika powder. The meat should be well-cooked, so fry for about 10 minutes. (Be careful not to burn it!)
  5. For the sauce, mix mayonnaise, tomato paste, pickle juice, and mustard in a bowl. Taste and season as desired. (about 5 minutes)
  6. Remove the baked dough from the oven and let it cool slightly. Then cut it into the desired shape – either large pieces for wraps or smaller portions for finger food.
  7. Top the dough pieces with the ground beef mixture, lettuce leaves, tomatoes, onions, and pickles.
  8. Generously drizzle the sauce over the filling and carefully roll up the dough. If making wraps, ensure they are well sealed. (about 5 minutes)
