Salmon in Lemon Butter with Crispy Potatoes & Broccoli

  • 4 tablespoons unsalted butter
  • 2 tablespoons fresh lemon juice

  • 1.5 pounds small potatoes (Yukon Gold or red)

  • 1 pound fresh broccoli florets
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 200 °C (top/bottom heat) to ensure the potatoes become evenly crispy.
  2. Thoroughly wash and halve the small potatoes. In a large bowl, mix with 3 tablespoons olive oil, 1 teaspoon garlic powder, 1 teaspoon paprika, salt, and pepper until evenly coated.
  3. Place the potatoes on a baking sheet lined with parchment paper, ensuring they are not overcrowded. Bake in the preheated oven for about 25-30 minutes until golden brown and crispy.
  4. While the potatoes are baking, prepare the broccoli. In a bowl, toss the florets with 1 tablespoon olive oil, salt, and pepper. After 15 minutes of baking the potatoes, add the broccoli to the sheet and roast together for an additional 10-15 minutes until the broccoli is tender.
  5. Meanwhile, prepare the salmon fillets. In a pan over medium heat, melt 4 tablespoons of unsalted butter. Add the chopped garlic and sauté for 1-2 minutes until fragrant but not browned.
  6. Season the salmon fillets with salt and pepper and place them skin-side down in the pan. Cook for 4-5 minutes until the skin is crispy, then carefully flip and cook for another 2-3 minutes until the salmon is cooked through and flakes easily with a fork.
  7. Drizzle the fresh lemon juice and lemon zest over the salmon and briefly toss in the pan to combine the flavors.
  8. Serve the salmon alongside the crispy potatoes and broccoli on plates. Garnish with fresh parsley and offer lemon wedges for serving.
