  • 2 teaspoons soy sauce

  • 2 teaspoons toasted sesame seeds

Instructions

  1. Prepare the spinach: Take the spinach and place it on a cutting board. Trim the ends and cut the leaves into about 2-inch pieces. This should take about 1 minute.
  2. Blanch the spinach: Bring a pot of water with 1 teaspoon of salt to a boil. Add the spinach and blanch for 30 seconds until just wilted. Be careful not to leave the spinach too long, as it will become mushy.
  3. Cool the spinach: While blanching, prepare a bowl of ice water. After blanching, immediately transfer the spinach to the ice water bowl to stop the cooking process. Let it sit in the ice water for 1-2 minutes. This helps retain the green color.
  4. Drain the water: After cooling, gently remove the spinach and gently squeeze out the excess water. Be careful not to crush the spinach so it retains its shape. This should take about 1 minute.
  5. Mix: Place the drained spinach in a bowl and add the finely chopped garlic, green onion, soy sauce, salt, toasted sesame oil, and sesame seeds. Mix everything thoroughly until the spinach is evenly coated with the seasonings. This should take about 2 minutes.
  6. Serve: Plate the Korean spinach side dish and enjoy it as a side to your main dish. It can be served warm or cold and is delicious in both variations.
