  • 1 clove garlic, minced
  • 1 teaspoon dried dill (or 1 tablespoon fresh dill, finely chopped)
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil (optional, for added richness)

Instructions

  1. Preheat the oven to 220°C (428°F). This will ensure the potato wedges become evenly crispy.
  2. Peel the potatoes and cut them into even wedges, about 1.5 cm thick, to ensure they cook evenly.
  3. Place the potato wedges in a large bowl and add the olive oil, garlic powder, onion powder, oregano, thyme, paprika, salt, and pepper. Mix well to ensure the spices are evenly distributed.
  4. Spread the seasoned potato wedges on a baking sheet lined with parchment paper, ensuring they are in a single layer for optimal roasting.
  5. Bake the potato wedges for 25-30 minutes until they are golden brown and crispy, flipping them halfway through for even browning.
  6. While the wedges are baking, prepare the yogurt dip by mixing the Greek yogurt, lemon juice, minced garlic, dill, salt, and pepper in a small bowl. Stir well until creamy.
