  • 1 medium zucchini, grated (about 1 cup)
  • 1 cup feta cheese, crumbled
  • 1/2 cup Greek yogurt
  • 1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 1 egg (for egg wash)
  • 1 tablespoon sesame seeds (optional)
  • 1 tablespoon chopped fresh parsley (for garnish, optional)

Instructions

  1. In a large bowl, combine the yeast, sugar, and warm water (about 110°F or 43°C). Let it sit for 5-10 minutes until the mixture is foamy.
  2. Add the flour, salt, and olive oil, mixing until a sticky dough forms. You can use a wooden spoon or your hands.
  3. Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. Make sure the dough does not become too dry; add a little water if necessary.
  4. Place the dough in an oiled bowl and cover with a damp cloth. Let it rise in a warm place for 1 hour, until doubled in size.
  5. While the dough is rising, prepare the filling: In a bowl, mix the grated zucchini, crumbled feta, Greek yogurt, fresh dill, minced garlic, and salt and pepper until well combined.
  6. Once the dough has risen, place it on a floured surface and gently knead it. Divide into equal portions (about 10-12) and roll into small circles (about 4 inches in diameter).
  7. Place a spoonful of filling in the center of each dough circle. Fold the edges of the dough over the filling and seal well to prevent leakage.
  8. Place the shaped rolls on a baking sheet lined with parchment paper. Cover with a cloth and let rise for another 30 minutes.
  9. Preheat the oven to 375°F (190°C). Brush the rolls with a beaten egg and sprinkle with sesame seeds if desired.
  10. Bake the rolls in the preheated oven for 25-30 minutes, until golden brown and hollow-sounding when tapped on the bottom. Allow to cool slightly before serving.
