- 1 tsp cornstarch
- 1 1/2 cups heavy cream
- 1/2 cup (1 stick) butter
- 5 cloves garlic, finely minced
- 1 tbsp chopped fresh thyme
- Kosher salt, to taste
- Freshly cracked black pepper, to taste
- 3 lb sweet potatoes, peeled and sliced thin (about 1/8-inch thick)
- 1/3 cup fresh parmesan cheese, grated
- Preheat your oven to 190 degrees Celsius.
- Peel the sweet potatoes and slice them thin (about 1/8 inch thick). Make sure to cut even slices for uniform cooking.
- In a small pot over medium heat, melt the butter. Add the minced garlic and sauté for 1-2 minutes until fragrant but not burnt.
- Pour the heavy cream into the pot and stir well. Add the chopped thyme, kosher salt, and freshly cracked black pepper. Let the mixture simmer for 5 minutes to allow the flavors to meld.
- In a bowl, mix the cornstarch with 1 tablespoon of cold water until dissolved, then add this to the cream mixture to thicken it. Let it simmer for another 3-4 minutes while stirring constantly.
- Place the sliced sweet potatoes in a baking dish and pour the garlic cream mixture evenly over them. Gently stir the sweet potatoes to ensure they are well coated with the sauce.
- Sprinkle the dish with freshly grated parmesan cheese and place the baking dish in the oven. Bake for 30-35 minutes until the sweet potatoes are tender and the top is lightly golden brown.
- Once the dish is done, remove it from the oven and let it rest for 5 minutes before serving to allow the flavors to settle.

Keywords: Avoid cutting the sweet potatoes too thick, as they will not cook evenly. Use a ceramic or glass baking dish for even heat distribution. For a spicier kick, add a pinch of cayenne pepper or red pepper flakes to the garlic butter.
