Homemade Garlic Butter Sweet Potato Bake

  • 1 1/2 cups heavy cream
  • 1/2 cup (1 stick) butter
  • 5 cloves garlic, finely minced
  • 1 tbsp chopped fresh thyme
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • 3 lb sweet potatoes, peeled and sliced thin (about 1/8-inch thick)
  • 1/3 cup fresh parmesan cheese, grated

Instructions

  1. Preheat your oven to 190 degrees Celsius.
  2. Peel the sweet potatoes and slice them thin (about 1/8 inch thick). Make sure to cut even slices for uniform cooking.
  3. In a small pot over medium heat, melt the butter. Add the minced garlic and sauté for 1-2 minutes until fragrant but not burnt.
  4. Pour the heavy cream into the pot and stir well. Add the chopped thyme, kosher salt, and freshly cracked black pepper. Let the mixture simmer for 5 minutes to allow the flavors to meld.
  5. In a bowl, mix the cornstarch with 1 tablespoon of cold water until dissolved, then add this to the cream mixture to thicken it. Let it simmer for another 3-4 minutes while stirring constantly.
  6. Place the sliced sweet potatoes in a baking dish and pour the garlic cream mixture evenly over them. Gently stir the sweet potatoes to ensure they are well coated with the sauce.
  7. Sprinkle the dish with freshly grated parmesan cheese and place the baking dish in the oven. Bake for 30-35 minutes until the sweet potatoes are tender and the top is lightly golden brown.
  8. Once the dish is done, remove it from the oven and let it rest for 5 minutes before serving to allow the flavors to settle.
