Healthy Vegetable Roll with Avocado Cream

  • 3 potatoes (waxy)
  • 2 carrots
  • 1 zucchini
  • 150 g cheese (grated)
  • 3 eggs
  • Salt & pepper
  • 2 avocados
  • 1/2 head of lettuce
  • 2 tomatoes
  • 40 g parmesan (shaved)

Instructions

  1. Peel the potatoes and carrots, and grate them along with the zucchini into a large bowl. This should take about 10 minutes.
  2. Add 1 teaspoon of salt and mix the vegetables well. Let the mixture sit for 10 minutes to allow the salt to draw out moisture from the vegetables.
  3. After 10 minutes, squeeze the vegetables in a dish towel to remove excess moisture. Ensure that the mixture is not too wet, as this could affect the consistency of the roll.
  4. Mix the squeezed vegetable mixture with 3 eggs, salt, pepper, and the grated cheese in the bowl. Stir everything well until the mixture is even.
  5. Line a baking sheet with parchment paper and spread the vegetable mixture evenly on it. Shape the mixture into a rectangle, ensuring that the thickness is uniform. Bake the roll at 200 degrees Celsius for 30 minutes, until lightly golden brown.
  6. While the roll is baking, prepare the avocado cream. Halve the avocados, scoop out the flesh, and mash it on a plate with a fork. Add salt to taste.
  7. Wash the lettuce and separate the leaves from the head. Slice the tomatoes into thin rounds.
  8. After baking, remove the vegetable plate from the oven and let it cool slightly. Carefully peel off the parchment paper.
  9. Spread the cooled vegetable plate evenly with the avocado cream and top it with lettuce leaves, tomato slices, and shaved parmesan.
  10. Carefully roll the vegetable plate starting from the long side. Cut the roll into even slices and serve immediately.
