This Thai Mango Salad is a vibrant and refreshing dish that combines sweet mangoes with crunchy vegetables and aromatic herbs. It’s a quick and healthy option that brings the essence of Thai cuisine right to your table.

Ingredients

Scale
  • 2 ripe mangoes, peeled and julienned
  • 1 large cucumber, julienned
  • 1 red bell pepper, thinly sliced
  • 1 cup grated carrots
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons roasted peanuts, chopped
  • 3 tablespoons lime juice
  • 1 tablespoon fish sauce (or soy sauce for a vegetarian option)
  • 1 tablespoon agave syrup (or honey)
  • 1 small red chili, thinly sliced (adjust to taste)
  • salt to taste

Instructions

  1. Prepare all ingredients: Peel the mangoes and cut them into fine julienne strips. This should take about 5 minutes. The mango should be juicy and sweet.
  2. Slice the cucumber into julienne strips. Be sure to remove the seeds to avoid a watery salad. This action takes another 3 minutes.
  3. Halve the red bell pepper and slice it thinly. This should not take longer than 2 minutes. The bell pepper should remain crunchy.
  4. Grate the carrots. One medium carrot should be sufficient for the salad and takes about 2 minutes. Ensure the carrots are grated evenly.
  5. In a small bowl, mix the lime juice, fish sauce (or soy sauce), and agave syrup with a pinch of salt. This mixture should be well combined and takes about 2 minutes.
  6. Pour the dressing over the prepared ingredients in a large bowl. Gently mix everything for about 1-2 minutes until all ingredients are evenly coated.
  7. Add the chopped cilantro and mint leaves along with the sliced chili. Mix gently again for 1 minute to distribute the herbs evenly.
  8. Transfer the salad to a serving plate or bowls and sprinkle the chopped peanuts on top. This adds extra crunch and looks beautiful. The presentation should take about 2 minutes.
  9. Optional: Garnish with additional herb sprigs or lime wedges for a fresh pop of color. This takes another 2 minutes.

Nutrition

Keywords: Make sure to choose ripe mangoes that yield slightly to pressure. Avoid overmixing the ingredients to maintain the freshness and crunchiness of the vegetables. If using peanuts, lightly roast them in a pan beforehand to enhance the flavor. For a vegetarian version, soy sauce is a great alternative to fish sauce. Feel free to experiment with ingredient ratios for sweetness or spiciness.
