Instructions

  1. Prepare the strawberries: Wash the strawberries thoroughly, remove the green tops, and slice them. This takes about 5 minutes.
  2. Whip the cream: In a large bowl, whip the 200 ml heavy cream with a hand mixer until soft peaks form. This should take about 3-5 minutes. Be careful not to overmix the cream.
  3. Combine mascarpone and sugar: Add the 250g mascarpone, 100g powdered sugar, and 1 teaspoon vanilla extract to the whipped cream and gently fold together with a spatula until well combined. This takes about 2 minutes.
  4. Prepare the ladyfingers: Pour the 200 ml milk into a shallow dish. Briefly dip the ladyfingers into the milk, ensuring they do not become soggy but are moistened. This should take a maximum of 1-2 seconds per biscuit.
  5. Layer the torte: Start with a layer of ladyfingers at the bottom of a springform pan. Spread the mascarpone cream evenly over the ladyfingers and add a layer of strawberries. Repeat this process until all ingredients are used up, aiming for about 3-4 layers. This takes about 10 minutes.
  6. Chill the torte: Cover the springform pan with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the torte to set and the flavors to meld.
  7. Garnish: Before serving, remove the torte from the refrigerator, garnish with additional fresh strawberries and optional mint leaves. Cut the torte into slices and serve. This takes about 5 minutes.
