- 3 cloves of garlic, minced
- 1 small onion, finely chopped
- 1 pint (300g) of cherry tomatoes, halved
- 4 cups (120g) of fresh spinach, roughly chopped
- 2 cups (480ml) of vegetable broth (or chicken broth)
- 1 cup (240ml) of heavy cream
- 1 teaspoon of Italian seasoning (or a mix of dried basil, oregano, and thyme)
- Salt to taste

- 1/2 cup (50g) of grated Parmesan cheese

- Heat 2 tablespoons of olive oil in a large pot over medium heat. Wait about 1-2 minutes until the oil is hot.
- Add the finely chopped onion and sauté for 3-4 minutes until soft and translucent.
