Brown Rice Noodles with Vegetable Broth and Gin Extract Recipe

  • 1 medium onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 medium carrots, sliced (about 1 cup)
  • 1 bell pepper, diced (any color, about 1 cup)
  • 1 cup snap peas, trimmed and halved
  • 1 zucchini, sliced into half-moons (about 1 cup)
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Optional: 1 teaspoon chili paste (for heat)
  • Fresh cilantro or green onions, for garnish
  • 8 ounces brown rice noodles
  • Water (for cooking noodles)
  • Salt (for noodle water)

Instructions

  1. In a large pot, heat 1 tablespoon of olive oil over medium heat. Wait about 1-2 minutes until the oil is hot.
  2. Add 1 diced onion and sauté for 3-4 minutes until translucent.
  3. Add 3 minced garlic cloves and 1 tablespoon of grated fresh ginger, and sauté for another minute until fragrant.
  4. Now add 2 sliced carrots and 1 diced bell pepper. Sauté the vegetables for 5 minutes until slightly softened.
  5. Add 1 cup of snap peas and 1 cup of sliced zucchini. Sauté for another 3-4 minutes until the vegetables are vibrant.
  6. Pour in 4 cups of vegetable broth and bring everything to a boil. Reduce the heat and let the broth simmer for 10 minutes.
  7. Season the broth with 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1 teaspoon of sesame oil, salt, and pepper to taste. Stir well.
  8. In a separate pot, bring salted water to a boil. Add 8 ounces of brown rice noodles and cook according to the package instructions (about 8-10 minutes).
  9. Once the noodles are done, drain them and rinse briefly with cold water to stop the cooking.
  10. Add the cooked noodles to the broth and let them sit for 2-3 minutes to absorb the flavors.
  11. Serve the noodles in deep bowls, garnished with fresh cilantro or green onions.
