Ingredients

Scale
  • 250 g dried white beans (small to medium)
  • 1 onion
  • ½ red bell pepper
  • 1 small carrot
  • 4 tablespoons olive oil
  • 1.5 tablespoons tomato paste
  • 1.5 teaspoons oregano
  • 2 teaspoons paprika
  • 2 tablespoons flour
  • 2 tablespoons homemade soup powder (*)
  • 5 cups water (approx. 1.25 l)
  • 1 bay leaf
  • 1 teaspoon salt
  • Pepper

Instructions

  1. Soak the beans overnight in water, ensuring they are completely covered.
  2. The next day, rinse the beans and bring them to a boil in a pot with unsalted water. Cook for about 1 to 1.5 hours until they are soft but not falling apart.
  3. While the beans are cooking, finely chop the onion, red bell pepper, and carrot. The onion should be translucent and soft before proceeding.
  4. In a large pot, heat 4 tablespoons of olive oil. Add the vegetables and sauté over low to medium heat for about 5-7 minutes until the onion is translucent.
  5. Add the tomato paste, oregano, and paprika, and stir well. Let the mixture sauté for about 2-3 minutes to release the flavors.
  6. Sprinkle in the flour and sauté lightly while stirring for about 1 minute. This will help make the soup creamier.
  7. Now add the homemade soup powder, 5 cups of water, bay leaf, salt, and pepper. Stir well.
  8. Add the cooked beans to the pot and bring everything to a boil. Let the soup simmer over low heat for 15-30 minutes until all the flavors are well combined.
  9. To make the soup creamier, use an immersion blender to puree a small portion of the soup for a wonderfully smooth consistency. Be careful not to puree everything to maintain some texture.
  10. Season with pepper and possibly more salt to taste, and serve the soup hot. Fresh bread is ideal to accompany it.
