- 250 g dried white beans (small to medium)
- 1 onion
- ½ red bell pepper
- 1 small carrot
- 4 tablespoons olive oil
- 1.5 tablespoons tomato paste
- 1.5 teaspoons oregano
- 2 teaspoons paprika
- 2 tablespoons flour
- 2 tablespoons homemade soup powder (*)
- 5 cups water (approx. 1.25 l)
- 1 bay leaf
- 1 teaspoon salt
- Pepper
- Soak the beans overnight in water, ensuring they are completely covered.
- The next day, rinse the beans and bring them to a boil in a pot with unsalted water. Cook for about 1 to 1.5 hours until they are soft but not falling apart.
- While the beans are cooking, finely chop the onion, red bell pepper, and carrot. The onion should be translucent and soft before proceeding.
- In a large pot, heat 4 tablespoons of olive oil. Add the vegetables and sauté over low to medium heat for about 5-7 minutes until the onion is translucent.
- Add the tomato paste, oregano, and paprika, and stir well. Let the mixture sauté for about 2-3 minutes to release the flavors.
- Sprinkle in the flour and sauté lightly while stirring for about 1 minute. This will help make the soup creamier.
- Now add the homemade soup powder, 5 cups of water, bay leaf, salt, and pepper. Stir well.
- Add the cooked beans to the pot and bring everything to a boil. Let the soup simmer over low heat for 15-30 minutes until all the flavors are well combined.
- To make the soup creamier, use an immersion blender to puree a small portion of the soup for a wonderfully smooth consistency. Be careful not to puree everything to maintain some texture.
- Season with pepper and possibly more salt to taste, and serve the soup hot. Fresh bread is ideal to accompany it.
